I like all types of breakfast, but smoothies will always be my favourite! They are so easy to make and you can make so many types of smoothies, although I always end up rotating the same few. So I thought I would share one of my faves with you.

I love beetroot a lot, especially combined with ginger! Great way to wake up. Also beetroot gives smoothies such a beautiful color. The recipe for this one is pretty easy. The chia seeds are not necessary, but I always add chia of flax seeds to give it some good fat. Also I try to make my own oat milk (recipe here). But you could also use store bought milk, coconut water or just regular water and some nuts.

For me smoothies are the best, because I can take them with me in the train and have a breakfast to go (or a snack/lunch/second breakfast). Anyway here is the recipe:
Beetroot Smoothie
for 2 smoothies or 1 large one
1 beetroot (about 1 cup)
1 cm piece of ginger
1 cup frozen mango
2 bananas
1/2 tbsp chia seeds
1/2 tbsp maple syrup
2 cups oat milk
Peel the beetroot and cut it into small pieces, peel the ginger. Add all the ingredients to the blender and blend till smooth.
