I am one of those persons that wakes up hungry, and while I like the feeling of an empty stomach and eating a big breakfast, it also has some downsides. A rumbling stomach is what wakes me up when I want to sleep in. And when I oversleep I need to get a quick thing to eat before running out of the door or else I will be hangry for a big part of the day. I try to not let this happen and get up a bit earlier so I can start prepping food. But even then you can often find me snacking on something while preparing breakfast.
The same thing happens when I come back from a workout or a long day at university. So, I stack my backpack with fruit and veggie slices and make myself this cashew drink to survive my day. The cashews and dates make this drink really rich and filling. I wouldn’t recommend drinking it instead of water (because don’t forget to drink your water!), but it is a good snack for when you are feeling hungry and need to fill your belly with a snack as they are both things that really fill you up.
Cashews are full of good nutrients (which you can read more about here) but dates too! First of all, dates are easily digested, they are full of vitamins and iron and when you get them fresh they taste amazing. Even though dates are pretty packed with sugar, it is comparable to the sugar in fruits. Combined with all the other nice things a date brings, its a good trade off! And ultimately your body needs a certain amount of sugar to live, so just don’t overdo it and don't eat too much of it. Store your dates in a cool and dark place (and don’t think about how creepy this sounds if we weren’t talking about the fruit).
Cashew, date & cinnamon shake
For 4 servings
150 gram cashews (soaked overnight or for at least 6 hours)
500 ml water
1 tsp cinnamon
Open the dates and remove the pits. Add all ingredients to the blender and blend until you get a smooth and creamy texture. The shake will keep in the fridge for 2 days.
