
I love pesto! But I have never shared my go to pesto pasta dish that I honestly make all the time. And with all the time, I actually mean half the time, because, although my boyfriend and I both love pasta, and he loves tomato sauce type pasta, I love pesto pasta. I have no choice to sometimes go for tomato sauce, because I am pretty good at compromising (and then he will cook, so it's the perfect lazy day hack!)

Anyway, if you don't have to compromise on pasta, and need a lazy day meal. Pick this one! I am in love with kale pesto, and the cashews make it really creamy.

When I make this sauce I use about half of the oil necessary and sub the rest with water. You could also only use water if you want to cut down on processed fats, especially because there is a bunch of healthy nuts in there already.

Easy Kale Pesto Pasta
400 gram pasta (whichever you like, I like to use penne)
1 bunch (120 gram) kale, chopped
1 cup cashew
½ cup sunflower seeds
2 cloves garlic, peeled
Juice of 1 lemon
60 ml olive oil (sub with water if you are avoiding oil)
300 grams cherry tomatoes, cut in half
Cook the pasta according to the packaging and drain. Meanwhile add kale, sunflower seeds, garlic, lemon juice, oil to a food processor. Blend until smooth (add a little water if the pesto is too dry). Bake the cherry tomatoes for 5 minutes and mix everything together.
