
We have been loving baked sweet potato for breakfast and lunch, and I am torn. I think I love the sweet ones the most, but the savoury one is pretty amazing as well.

We wanted to share it with you, and give some topping inspiration, because you can never have too many toppings! But I feel weird telling you how many pieces of banana need to be added, because let's be honest, it's gonna be great and it doesn't matter if you add 1 slice or 10. So this recipe is a non recipe, with some topping inspiration that you can use, or add your own favourites to.

Sweet Potato Breakfast
1 small sweet potato (per person)
Sliced banana
Blueberries (fresh or thawed)
Almond butter
Coconut yogurt
Granola
Passion fruit
Cacao nibs
Preheat the oven to 180C (360F). Poke a few holes through the skin of the sweet potato with a fork. Bake the potatoes in the oven for 50 minutes. Until soft and gooey. Slice in halve and add all your favourite toppings.
Enjoy warm.
