
It’s Monday morning, just before 8. Normally I would be doing yoga right now but instead I am already up on my laptop and writing. That is because today we have some people coming to fix our bathroom floor that has some loose tiles. I decided I wasn’t really comfortable doing yoga while 3 strangers walk through my studio (also the noise of the working isn’t really that relaxing). It’s ok though, in three days we will have a fixed bathroom floor and we can shower again! It is nice to take some time to write a recipe also, normally I wait until it’s evening so it is a nice change of habit

Our day starts by getting up around 5.30, and you may ask yourself: Why do I wake up that early? It is a good question, but honestly,I like waking up really early and having a long stretched morning with a big breakfast, yoga or a run and having some relaxing me-time before the rest of the world wakes up. I can recommend it to anyone, but it depends on your schedule if getting up early works for you too.

This salad is perfect when you have a little bit of extra time in the morning to prepare some beans, but you can also meal prep this salad and toss it together in a few seconds (so you don’t have to wake up at 5.30!). The combination of the spices and the beans is one that I really like and every time I made this salad, I started eating the beans while slicing the other veggies. If you are meal prepping, wait with adding the dressing to the salad until you are ready to eat it. Or add the dressing to a jar, then add beans, then tomatoes and cucumber and lastly the lettuce (like in the jar in the pictures).

Spicy Black Bean Salad
Serves 2 or 3
1 can (240 gram without liquid) black beans
1 tsp cayenne
1 tsp cumin
1 tsp ground cilantro
salt and pepper to taste
½ cucumber (sliced)
250 gram cherry tomatoes (sliced)
handful of any lettuce
Dressing
1 tsp honey
1 tsp mustard
1 tbsp vinegar
2 tbsp olive oil
In a pan, add a splash of water together with the black beans. Add the cayenne, cumin and cilantro and cook for a few minutes until nice and fragrant and until the beans start to get a nice crunch. Add salt and pepper to taste. Mix with the cucumber, cherry tomatoes and lettuce. To create the dressing, mix all ingredients together. Serve immediately or keep dressing separate until serving.
