My favourite during-the-week-breakfast is a green smoothie. And since I like with somebody who is afraid of spinach, I need to be smart about my green smoothies. I have used kale, but when it’s not in season I have to find other types of greens that are still good in smoothies, nutritious and not spinach. I know that there are a bunch of people out there that are not into cilantro. I am sorry, this smoothies is not for you.
For all the people that do like cilantro: This smoothie is great!
Pineapple Mojito Smoothie
2 large smoothies
2 handfuls cilantro (or spinach if you hate the taste)
1 handful mint leaves
2 cups (frozen) pineapple
juice of 1 lime
2 ripe bananas
2 cups coconut water
Blend everything together until smooth.
