Smoothiebowl Party!

I am visiting my boyfriend in the Netherlands and he gets up at 5:30! And while I think this is ridiculously early and my brain is still foggy with dreams I have noticed I love the extra time it gives me to wake up, make breakfast, workout and do nothing for an hour before my temporary workspace opens at 9:00, and I have to ‘start’ working. I am just a little afraid, because in about 20 days the clock will change into its summer time schedule, and while we can enjoy longer days, because of the sun I don’t think I am ready to get up at 4:30! I guess it is 5:30 still, but it sure won’t feel that way!

The reason he is getting up so early is because he likes to start working at 7:00, and I like to eat breakfast for an hour before he goes to work. He doesn’t really care about breakfast though. I, of course, have trouble with that, because it is breakfast. So we made the agreement that he will get up a little (5:30…) earlier, as long as I make breakfast and this breakfast is really tasty. He is in charge of making tea though!

I have been making many different types of smoothie bowls to make our bellies happy but also fill them up enough so that we both survive until lunchtime. The smoothie bowls that we have included in this post are favourites of us, but feel free to experiment with different types of fruits, toppings and ingredients. They are all easy to create if you have a blender and the toppings are a great way to add some texture to the smoothie.

Pretty Pink Beet Bowl

1 Beetroot

2 Bananas

200 ml Plant milk

1 cm Ginger

10 aardbeien frozen

Topping: Coconut Flakes, peanut butter, banana and chopped almonds

Blend all ingredients and add toppings

Tropical Coconut Banana Oat Bowl

100 gram Oats

200 ml Coconut milk

50 + 100 ml water (more or less)

1 tbsp Chia seeds

1 tsp Vanilla

2 Bananas

1 tbsp shredded coconut

Topping: Passion fruit, Chopped Dark Chocolate, Shredded Coconut and Granola

Mix the oats with the coconut milk, 50ml water, chia seeds and vanilla and place in the fridge for 30 minutes, or overnight.

After 30 minutes, or overnight, place all the ingredients in the blender and blend until smooth
