Super Fast Berry Ice Cream



The summer holidays are finally here and both of us Kwiekers are staying in the Netherlands for some family time. In a few days I will leave my family behind to spend the rest of the holidays down south and closer to the beach, I cannot wait! But before I am off, I wanted to share this quick little recipe for ice cream that literally is the best thing in the summer.


I used to devour a lot of ice cream but since I started to enjoy a healthier lifestyle I only enjoy it on special occasions. That was until I started to get on the banana ice cream wagon and I never looked back. The only problem is that I always forget to freeze my bananas so when the craving hits, I still have to wait a day before my bananas are frozen and I can actually make the nice cream. But since I do always have frozen berries in my freezer, I thought, why not use those?

After a few experiments this little recipe is what I came up with. It is my favorite super-fast ice cream and only contains ingredients that are good for you. You are just 3 ingredients and 5 minutes away from your new favorite summer treat! Just toss everything in a food processor and blend until creamy. All you have left to do now is eat!


Super Fast Berry Ice Cream

500 gram frozen berries

200 ml coconut milk

1 tbsp honey or maple syrup

Optional: juice of half a lime & extra berries as topping

Put all the ingredients in a food processor and blend. Scrape the sides if necessary. Taste and add more honey or lime if needed. Enjoy!
