
I hardly need to mention that we love eating and baking, right? That is also why I’m looking forward to visit Julia in Copenhagen next week, because I’m pretty sure that is what we will be up to for the entire week.

When I made this banana bread I thought, well this recipe is so simple, I won’t make it into a blog. But aren’t simple recipes the best sometimes? I mean this banana bread is vegan, easy to make and it tastes really good. The simplicity of the recipe is that you can use a blender to mash the bananas, although you could still use a fork and do it the old fashioned way. Baking right now is my favourite thing, especially when there are tiny snowflakes falling outside and I get to stay in and eat cake.

I wanted to make sure that the recipe was good so I actually ended up baking about 4 of these banana breads. This made bf Job really happy; because cake, and the supermarket; because I bought all of their brown and spotty bananas last weeks.

Banana bread
360 gram flour
2 tsp baking powder
200 gram coconut sugar*
1 tsp cinnamon
6 ripe bananas
½ cup oil
½ cup coconut milk
1 tsp lemon juice
Preheat the oven to 175C. Combine flour, baking powder, sugar and cinnamon in a bowl. Add 5 bananas, the oil, milk and lemon juice to a blender and mix until smooth. Add the banana mixture to the dry ingredients and mix together. Add the batter to a cake pan and top** with two halves of the last banana. Place the banana bread in the oven for 70 minutes and enjoy.
* if you don't have coconut sugar, replace it with cane sugar or white sugar
** We also topped the banana bread with some chopped walnuts
